  Description

The grey sole flounder is also called the witch flounder and the pole dab. The meat of the gray sole flounder is considered to be of high quality in flavor and texture. Gray sole can grow in length to more than 100 cm (40 in) but more often are spotted at sizes nearing 60 cm (2 ft)

The U.S harvests between 2,000 and 2,500 tons per year of the gray sole. European production is estimated at 15,000 to 20,000 tons per year.

U.S. stocks are overutilized but have not crashed. Protective measures have increased production indicating that the stocks are recovering. Production is expected to remain low. It should increase as the stocks recover.
