  Description

There are more than 300 know species of crawfish and they have been spotted on every continent except Africa. There are five commercially important species of crawfish: the red, river, signal, rusty, and northern crawfish. Crawfish are also called crayfish, crawdads, and mud bugs. Their meat and appearance is similar to that of lobster, although crawfish live in freshwater. Crawfish range in size between 7.5 and 25 cm (3 to 10 in), depending on the species and the location.

The U.S. supply of crawfish is expected to remain steady. Chinese crawfish imports into the United States are expected to decrease as a result of Chinese crawfish being illegally imported into the U.S. at less than fair market value.
